I was wondering, if you could recommend monochrome global shutter cameras that are compatible with the StereoPi.
If they also incorporate a trigger signal, that would be perfect.

You can consider SE397GS-01-CB cameras from Soho Enterprise.

These cameras are using unused LED line in a ribbon cable for sync signal. So you can do a synchronization without soldering.
I have a couple of such a cameras, and plan to test them in the nearest time.
You should understand, that these cameras are not supported by raspivid/raspistill, and you need to use raspiraw or another approach for them.
